My $100 Queso Cheese Dip Recipe

I'm getting right into it because it drives me crazy when bloggers share a recipe buried in ten paragraphs of who-frickin-cares. 

Let's get to the gold, or in this case, the queso. 

For years, I've been dreaming of making a queso dip out of my favorite cheese in the world right now, Yancy's Fancy Hatch Green Chili. 

Today's the day. 

The experiment is on.

I'm calling it my $100 Queso Cheese Dip. So cheesy and creamy you have to say "cheese" in two different languages. 

But it only cost $40 to make.

Sshhh.

Ingredients:

  • Two packages of Yancy's Fancy Hatch Green Chili cheese (it's not spicy)
  • 1.5 cups of Half & Half
  • 2 cans of Ortega diced green chilis (don't judge! I live on an island and out of season literally means out of season)
  • All the white meat from a "fresh" shredded chicken. We bought a whole cooked chicken from the deli at our local market and pulled the chicken ourselves. 
  • Salt & Pepper to taste (I'm apparently at the age where I have a favorite pepper blend. Try Viva Doria's Rainbow Blend)

Directions:

Shred the cheese.

Tear the chicken into smaller pieces.

Drain the chilis.

Mix everything into a crock pot. 

I cooked on low for an hour it was perfect. 

If you like heat, add some real hatch chilis if you can find them where you are. Or sprinkle some cayenne. That's always a fun surprise for guests. 

 It's rich and delicious with toasted pita bread and and corn chips. Even better on tacos.
